Rapeseed Oil Benefits

Ingredients

  • 4 tsp honey
  • 1 tbsp rapeseed oil
  • 1 orange - zest only
  • 50g sultanas
  • 125g fresh wholemeal breadcrumbs
  • 4 ripe peaches, halved and stones removed

Method

  1. Preheat the oven to 180°C, gas mark 4.
  2. Heat the honey, oil, orange zest and sultanas in a frying pan for about 1 minute.
  3. Stir in the breadcrumbs and cook for 1 minute.
  4. Allow to cool slightly.
  5. Press the crumb mixture on the cut surface of the peaches and place in a small baking dish.
  6. Bake for 15-20 minutes until golden.

Cooking Tips

  • Serve with fat-free Greek-style yogurt or half-fat crème fraîche.
  • Add some mixed spice or ground cinnamon for extra special flavour.
